Sake

Japan's national drink, sake, is a beverage made from fermented rice produced using highly polished sakamai rice, water, a mold called Aspergillus oryzae, and yeast. Premium sakes are aged for a year or more, and most varieties have an alcohol content by volume between 15% and 20% alcohol.
