Tteokbokki is a Korean dish from the tteok category, consisting of rice gnocchi seasoned with a spicy gochujang sauce, usually garnished with spring onion, eggs, sesame, or melted cheese. I offer you a non-spicy recipe perfect for everyone's taste, including mine, since many of us really can't handle very strong spiciness! At the end of the recipe, you will also find suggestions to make it spicy if you like!
INGREDIENTS:
• 200g of rice cakes
• Half an onion
• 100g of tomato paste
• 400ml of vegetable broth
• 3 tablespoons of plant-based cream
• Sweet paprika
• Salt
• Sugar
• Seed oil
For the topping (optional)
• 2 boiled eggs
• White sesame
• Melted cheese
Preparation

First, prepare the ingredients. Slice the onion into crescents and grate the melted cheese.

In a saucepan with high sides, heat some seed oil. Sauté the onions until they become transparent. Add the tomato paste, mix, and gradually add the vegetable broth. Continue stirring everything. Add paprika to taste. Keep stirring, season with salt, and add a teaspoon of sugar last.

Pour the rice cakes into the sauce, cover, and cook for about 10 minutes over medium heat, until the gnocchi soften and the sauce thickens. At the end of cooking, add the plant-based cream and mix.
Your tteokbokki are ready! You can serve them with sesame if you follow a vegan diet, or garnish them with a boiled egg and melted cheese. If you prefer it spicy, you can add a spoonful of gochujang sauce along with the tomato paste, or simply 2/3 cloves of dried chili during cooking! Enjoy your meal!
