Tteokbokki are a Korean dish of the category of tteok, it is rice dumplings seasoned with a spicy sauce of gochujang , to which are usually added spring onion, eggs, sesame or stringy cheese. I propose you a non-spicy recipe that is perfect for everyone's tastes, including mine, since many of us just can't handle spicy so strong! At the end of the recipe you will also find some suggestions to make it spicy, if you like it!
• 200g of rice cakes
• Half onion
• 100g of tomato paste
• 400ml of vegetable broth
• 3 tablespoons of vegetable cream
• Sweet paprika
• Seed oil
For the topping (optional)
• 2 hard-boiled eggs
• White sesame
• Stringy cheese
First prepare the ingredients. Cut the onion into moons and grate the melted cheese.
In a saucepan with high sides, heat a little seed oil. Fry the onions until transparent. Add the tomato paste, mix and add the vegetable stock. Keep mixing everything. Add the paprika to taste. Continue to mix, add salt and add a teaspoon of sugar last.
Pour the ricecakes into the sauce, cover and cook for about 10 minutes over medium heat, until the gnocchi have softened and the thickened sauce. When cooked, add the vegetable cream and mix.
Your tteokbokki are ready! You can serve them with sesame if you follow a vegan diet, or garnish them with a hard-boiled egg and stringy cheese. If you prefer spicy, you can add a tablespoon of sauce gochujang together with the tomato paste, or simply 2/3 cloves of dried chili during cooking! Enjoy your meal!
