The Japanese answer to light soy sauce, not to be confused with Chinese light soy sauce. Usukuchi is lighter in color and saltier than regular Kikkoman soy sauce. Bright amber notes are reflected in a rich umami flavor. Used mainly in western Japan, particularly in the Kansai region (Kyoto / Osaka). Usukuchi is used to enhance dishes without darkening the ingredients. Ideal for seasoning steamed vegetables, udon, and broths, and for enhancing the flavor of light-colored sauces.
