Soju is a very popular spirit sold in Korea and traditionally produced by distilling rice and other grains. However, since the 1960s, to ease the rice shortage, most soju has been made by diluting high-proof neutral alcohol distilled from sweet potatoes or tapioca.
One of the trendiest brands in South Korea, Chum Churum (which translates as "like the first time") is popular due to the added alkaline water, increased sweetness, and relatively lower alcohol content. This softer, smoother profile has been hugely successful and is especially popular among young drinkers in South Korea.
