Haruka rice is a round/medium-short-grain Japonica variety, particularly appreciated for preparing sushi. It is cultivated using Japanese techniques but is also often produced in Italy for the European market.
It is similar to classic “sushi rice”: with almost spherical, starch-rich grains that provide a soft, firm, and slightly sticky texture that helps the grains bind together when preparing nigiri, maki, and onigiri.
