The Haruka rice it's a variety Round/medium-short grain Japonica, Particularly prized for making sushi. It is cultivated using Japanese techniques but is also often produced in Italy for the European market.
It is similar to the classic “sushi rice”: with almost spherical grains, full of starch, which give a consistency soft, firm and slightly sticky which promotes bonding during the preparation of nigiri, maki and onigiri.
