Lye water, or kansui, is an alkaline solution for food use used in many cuisines around the world.
Kansui looks like normal water: clear, transparent, and odorless. But when you add it to water, the mixture will appear slightly cloudy. You can find it in ramen noodles, Chinese mooncakes, pretzels, bagels, tortillas, cured olives, and many other foods.
